Today, I’m going to show off an excelent recipe from Damn Delicious, tweaked just how I like it!
Hardware
- Pressure cooker, brand doesn’t matter
- Knife, if your chicken isn’t pre-cut
- Stirring spoon. You can use your hands if you really want tho.
Ingredients
- ~1 pound of chicken, whatever cut you prefer. I like thighs.
- 1 pack of taco seasoning
- 1 can of corn. Drain.
- 1 can of beans. Kidney or black beans work best. Drain.
- 1 can chicken or beef broth
- 1 jar fancy salsa, ~16oz
- 1c rice, I like long grain white.
- Cheese, for topping. I like cheddar.
- ~1Tbsp of jarred diced chipolte
- ~1Tbsp of garlic
Procedure
- Add everything but rice to pressure cooker
- Stir
- Add rice evenly over top. Don’t Stir!
- Cook for 12 minutes on high pressure
- Quick release
- Add cheese on top and c o n s u m e
Simple, tasty. Makes for a good weeknight meal. Leftovers also work out quite well for lunch. I recommend checking in on the comments of the original article for other modifications and suggestions. Till next time…
